About this coffee: This lot comes from Emanuel Incizo at Finca la Roma
This coffee was hand-picked to ensure that the ripest cherries were gathered at the peak of harvest. The cherries were pulped, then fermented underwater for 27 hours. Afterwards, they were gently washed and dried on raised beds until they achieved the optimum moisture.
Emanuel grew up in Gaitania, Tolima. In 2015, he learned to cup and later became the quality director at the ACISP co-operative. In 2019 Emanuel bought Finca La Roma, some 3 miles from Gaitania in Tolima where he grew up.
